{TWD} 15 Minute Magic

The title of this week’s Tuesdays with Dorie15 Minute Magic: Chocolate Amaretti Torte–reminds me of the junior high school game called 7 Minutes in Heaven. But instead of two giggling kids and a closet, this torte involves chocolate, almonds, and amaretti. What more could a girl want?

This cake truly is heavenly and is a very simple recipe, but the name is a bit of a misnomer. It really is quick and you do get it in the oven in 15 minutes, but it doesn’t take into account the time it takes to find amaretti. Amaretti are Italian almond macaroons. Apparently the only place in my town that sells them is a Starbucks and I found them there after checking World Market, the health food store, 2 regular grocery stores, the gourmet grocery, and the Trader Joes. I don’t know the exact time I spent looking for these things, but it was definitely more than 15 minutes.

Because I love ice cream, I paired the cake with homemade White Chocolate Ice Cream from The Perfect Scoop. The key to this ice cream is to use good quality white chocolate.  I mixed most of this batch of ice cream with dark chocolate truffles, but for the torte I thought plain was the best.

In her playing around section for this recipe, Dorie Greenspan suggests making an ice cream sundae. So I did. I topped a square of the cake with two mini-scoops of white chocolate ice cream, crushed strawberry sauce, whipped cream, and sliced almonds.

White Chocolate Ice Cream

From The Perfect Scoop by David Lebovitz
  • 8 ounces white chocolate
  • 1 cup whole milk
  • 2/3 cup sugar
  • Pinch of salt
  • 5 large egg yolks
  • 2 cups heavy cream

Place the white chocolate  in a large bowl and set a mesh strainer over the top.

Warm the milk, sugar, and salt in a medium saucepan.  In a separate medium bowl, whisk together the egg yolks.  Slowly pour the warm milk into the egg yolks, whisking constantly, then scrape the warmed egg yolks back into the saucepan.

Stir the mixture constantly over medium heat with a heatproof spatula, scraping the bottom as you stir, until the mixture thickens and coats the spatula.  Pour the custard through the strainer over the white chocolate.  Stir until the white chocolate is completely melted and the mixture is smooth, then stir in the cream.  Stir until cool over an ice bath.

Chill the mixture thoroughly in the refrigerator, then freeze in your ice cream maker according to the manufacturer’s instructions.

    LOL I too, would have liked Dorie to call the tort “15 minutes and a couple of weeks to find amaretti at a decent price!” LOL I found the ones she was asking for (1/4lb for $17!!!!).

  7. I’m totally laughing about seven minutes in heaven (and that there is a website devoted to kissing games – what will they think of next?) As usual, your dessert looks incredible. The ice cream sundae is to die for. I finally bought The Perfect Scoop after seeing all of the incredible ice cream you make out of it – I can’t wait to try this one!

    I don’t know what’s more decadent looking..the torte, the full on sundae–or that china. I can’t stop looking at it, I just love it!

    And I agreed–my post today used the “misnomer” phrase as well! (and it took me a week to find amaretti!)

  10. Good to know this cake is so good straight from the freezer, since that’s where mine is residing! Love the ice cream – as usual!! When I grow up I want to be able to make my ganache look as pretty as yours…

  11. Your interpretation of this recipe is amazing – the best I’ve seen of all this week. And you paired it with white chocolate – my favorite. I have some Callebut white chocolate in my cupboard right now and will have to try this soon.

  12. LOL, I thought of that too… that it took way more than 15 minutes to find the cookies. Well, the first time anyway. I guess if we had to do it again, we’d all know where to look 🙂

  14. something fruity like raspberry syrup on top might be so yummy since white chocolate+dark chocolate+almond combination might needs some ‘fiber’ and ‘lighter taste’. 🙂

    If i can find amaretti, then this would be my dessert for tomorrow!

  17. OMG, I think I was following you around in the search for the amaretti. I was like, Trader Joe’s must have them. Gelson’s? Whole Foods? Nope, nope, nope. In the end it would have been way faster to make them, right? Oh well! I love the sundae idea–and I wish I had some left to try straight from the freezer! Gorgeous job.

  19. Really nice results. I love all the amaretti stories–when I took my homemade amaretti to the office, one of the women said, “hey, I just saw those for the first time at Starbuck’s.”
