Sugar-Topped Molasses Spice Cookies: A perfectly spiced cookie that was a big hit with everyone.
I baked them for a Junk-Food Halloween hike to the top of Mt. Baldy. Other people brought Halloween candy, I brought homemade cookies.
For home use, I made them into ice cream sandwiches with the Cinnamon Ice Cream from David Lebovitz’s The Perfect Scoop.
Thank you to Pamela of Cookies with Boys for hosting this week’s Tuesdays with Dorie selection. For the recipe, visit her blog or buy the book.
Yum! A perfect icecream pairing once again.
I made these last week and loved them too! Yours look awesome, love the ice cream sandwich 🙂 I have also made that cinnamon ice cream and it is perfect! I made the cran apple crisp this week, so good!
Mmmmm, with cinnamon ice cream they must have been absolutely delicious. I love that you brought these for your hike. They seem like a really great hiking cookie. Sturdy enough to carry in a pack without breaking, sweet enough to be a treat, but not too sweet.
Ooh! What a great idea to do the cinnamon ice cream! It looks like yours turned out perfectly. I still have one packet left and need to bake them a little bit longer.
Mmm, spicy ice cream sammies!!!
ARGH! That must be divine! …with cinnamon ice cream! …what a match!
Wendy, I should really know better than to read your blog first thing in the morning BEFORE I’ve eaten anything. OH MY GOOD! Really this is simply dee-vine!
Oh!! Wendy!! Outstanding. And with cinnamon ice cream – shazam!!! I WILL have to try that.
ooh … this looks delicious. I can chop it down several at one go.
You took these great cookies to a whole new level. Yum!
Wonderful idea.
I made the bundt cake this week.
These would be great with cinnamon ice cream!
They look perfect and you know I’m all for the ice cream!
Beautiful!! I’m digging the ice cream… cinnamon’s my fave flavor. 🙂
That ice cream and I are very good friends now!
These cookies really are perfect for making into ice cream sandwiches! Your cookies look great! They must have been a hit on the hike!!
If there are cookies, Wendy must have ice cream.
It goes without saying.
Ha! I knew you wouldn’t disappoint me . . . cinnamon ice cream RULES and pairing them with these molasses cookies is pure brilliance. You’re good.
I had mine with some vanilla ice cream and that was fabulous, but I’m sure the cinnamon flavor is terrific with these, too!
Every time I look at your posts, I ask myself “Why didn’t I do that?!?” I bet those ice cream sandwiches were fabulous.
Yum Yum!
um, i want one of those sandwiches right now. love the sparkling sugar too:)
That ice cream sandwich looks great!! Your cookies look delicious. I baked the apple crisps this week and I’m in LOVE.
I have to agree, these would make perfect ice cream cookie sandwiches
A junk-food hike, I love it! Your ice cream sandwiches look amazing.

Mmm, sounds like a great combination. I really want an ice cream sandwich now, and I don’t even like them that much. =)
Mmmm, those ice cream sandwiches are killer! Wow, gotta try some of that. Nice choice 🙂
yum! I kept thinking how these would make such a great ice cream sandwich- cinnamon ice cream sounds like the perfect flavor! Beautiful!
I love that you made ice cream sandwiches with them – yum!
OK, these have to be the best looking ice cream sandwiches ever. They are perfect!
Oh my, pairing the ice cream and cookies together looks like a holiday dessert dream come true!
I made these with David Lebovitz’ cinnamon ice cream, too. It’s a match made in heaven!
I truly love thin crunchy cookies. Yum!
Your cookies look perfect and even better with that nice thick layer of icecream in the middle.
I can see why everyone loved them. They are a good looking cookie and generally I don’t like thin cookies. They look even better sandwiching some yummy cinnamony ice cream!

OMG OMG OMG..can I say OMG again? I took one look at these, and nearly died. All that cinnamon ice cream sandwished between those gorgeous spice cookies, and that butter toffe crunch below, and the chocolate bundt..HELP, I’m salivating! You totally rock, Wendy, and probably kill diets..lol
Picture perfect!! That’s all I’ve got to say.
Beautiful! You’re my ice cream hero, you always make the most complimentary flavors to what you’ve baked.
