It’s all pumpkin, all the time right now. It was fine and dandy last week when *gasp* it was below 70°F and I contemplated turning on the heat. Today it was 97°F and it’s expected to be in the high 80’s for the next week. Even though it’s not pumpkin weather, I’ve decided that this week will be Pumpkin Week on Pink Stripes. All posts, with the exception of one, will be pumpkin posts.
This week’s Sweet Melissa Sundays selection–Spiced Pumpkin Cookie Cakes–starts off the week with a fantastic bang. It’s a cookie! It’s a cake! It’s a cookie cake! This cinnamon-nutmeg spiced treat reminds me of a whoopie pie. It may actually be a whoopie pie, 2 round cakes sandwiching a creamy filling. Yup, I think this fits the bill.

I haven’t ventured much beyond pumpkin bread (tho I love that!) so I’m looking forward to seeing your treats! On the other hand, I’m anxiously hoarding the two cans I have left over from last year, because I still haven’t been able to find any this year… These cookies look wonderful – moist and cakey.

These look great, especially with the cream cheese filling. Our fall weather is more like winter – guess no one is getting a break this year.
Yes, all of California seems to be very bipolar in its weather. I was up in Berkeley and it was raining one day and then sunny a couple days later.

Ooh, ooh, you KNOW I’m excited about Pumpkin Week! Can’t get enough of the stuff, and now that I’ve located some in my neighborhood grocery store I’m not having to be quite so stingy. Love the way your cookies look – I’ve had zucchini whoopie pies and they were delicious too.

If you can’t find canned pumpkin one can always cut up a fresh pumpkin and bake it. It is easy and not hard to do. This veggie is one of the very few that taste the same whether from the can or baked fresh!

I made Martha’s pumpkin whoopie pies last year, and that was the first time I had ever had them.
