{sms} Butterscotch Caramel Cashew Bars

I’m back in the swing of things with Sweet Melissa Sundays. The pick of the week was the very delicious, the very gooey Butterscotch Caramel Cashew Bars.

A brown-sugar shortbread cookie base is topped with a butterscotch caramel topping and then sprinkled with whole cashews. Very easy.

  1. That brown sugar shortbread is calling to me! And the topping is only adding to the appeal. With a little vanilla ice cream, I’ll bet this would be over the top (and if I know you, there was some ice cream lurking in the background!!)

  5. I am not a big fan of shortbread cookies/doughs in general, but I’ll make you a deal:

    You: bring me one of these ridiculous looking bars
    Me: eat it and possibly re-evaluate position.


  6. If you can hold back from eating all of these, they look like they might make perfect gifts at the holidays. Festive, sweet and easy to make. (Although I’ll eat a cashew anytime, I tend to associate them with the holidays.)

  7. Hmm. Looking at your pictures makes me thing I did something wrong to my crust, which maybe explains why I didn’t think they were that good! Maybe I’ll have to try them again sometime!
