{TWD} Savory Corn and Pepper Muffins

imgp3143

I don’t have much to say about this week’s Tuesday with Dorie selection. I don’t wake up dreaming of corn muffins/bread, nor is it something I crave when I’m awake. I like corn bread, don’t get me wrong…it’s just not, oh let’s just say chocolate biscotti. 😛

I made the recipe has written, except I used my mini-muffin pan. I was going to add lime zest, but completely forgot. These were delicious and spicy. These muffins are loaded with diced red bell pepper, jalapeño, corn kernels, cilantro, chili powder. Everyone who tried them, loved them.

I was going to pair them with vegetarian chili, however, since the outside temperature has become warm I wasn’t craving chili. Today it’s  in the 80’s in the Los Angeles area 🙂 I paired my muffins with a salad (to use up left over red bell pepper with homemade jalapeño-lime vinegarette.

Thank you to Rebecca of Ezra Pound Cake for hosting this week’s selection. Please visit her blog for the recipe.

  1. I thought about minis but was too lazy to spray my pans! My regular size muffin pans are silicone and I’m spoiled… Corn muffins are not crave-worthy, but yours are pretty and the lime zest would be delicious.

  2. It was warm here, now it is cold! Too cold. I like cornbread too, but definitely not chocolate biscotti. Your muffins came out very nice just the same. I am glad everyone liked them. My hubby liked them a lot too.

  3. Oooh, your pix make these look totally craveworthy. I bet these would be GREAT with a salad (and a little more resolution-friendly than a bowl of chili!)

  4. Pairing these with a salad sounds ideal…warm weather or cold! Yours look very lovely…I just love all those colors peeking out, don’t you? Such fun!

  5. Yeah, what’s with the weather? We’re pushing 65 degrees here in Vegas. Helloo, winter? Oh well, we shouldn’t complain, right? I mean, everyone else is freezing their butts off.

I used to live in L.A., in the SF Valley. It was great!

  6. All of you Los Angelinos (???) are making me so jealous with your warm weather!!!

Your muffins look gorgeous! The lime zest addition sounds like it would have been fabulous! Next time!

  7. Love your muffins… very pretty. Know what you mean about cravings, me chocolate. Although, on a cold winter day (cold here) cornbread and soup/chili is a winning combo. You were so good to make them. Love the lime zest idea.
Thank you Pinkstripes for stopping by for a visit.

  8. Oh, please, please soak up plenty of that 80 degree weather for those of us in the frozen tundra (today’s high: 6)…I wondered if anyone would make mini muffins. Great idea!

  9. Thanks for the compliments on my muffins! I’m really enjoying being a member – your muffins look equally as delicious!!!

  10. We were in the single digits here in Northern Illinois. Eighty degrees sounds like a distant dream to me. I wish I had thought of the lime zest. That would have added an interesting layer to the whole experience!

  11. Your muffins look great! The idea of the lime zest sounds interesting. And oh my! I’m definitely going to have to try the chocolate biscotti!! 🙂

  12. such sweet mini muffins, and the lime idea sounds fabulous. I’ll try not to be jealous of the warm weather, because I did get to have chili, after all…

  13. Your muffins sure are pretty. I think that I would’ve liked them better with the peppers and the cilantro–I like spices and the different tastes in things like this.

  14. You have quite a following here! I love the color of your corn muffins. Funny, I wasn’t craving for these either since it was so nice and sunny in CA! (I live in the Bay Area) Hopefully I will make ome turkey chili soon and make some of these. I like the pepper idea.

  15. Yes, chili in that kind of heat is just wrong. I’m glad your muffins turned out so well! I’m going to have to remember your lime zest idea…that’s a keeper!

  16. I’m also in LA — wasn’t it crazy hot this weekend??? Delicious looking muffins … that salad you paired with the muffin sounds delicious…and perfect for the weather…great job!!!

  17. Well. I came over here to check out the muffins (very nice, by the way), but I got sidetracked by those biscotti. Oh, and that souffle. You have been cooking up a storm!

  18. Ooohh I bet some lime zest would have kicked it up a notch. I wrote that suggestion in my book so I can remember for next time 😉 Love the minis! Great job!
