I don’t have much to say about this week’s Tuesday with Dorie selection. I don’t wake up dreaming of corn muffins/bread, nor is it something I crave when I’m awake. I like corn bread, don’t get me wrong…it’s just not, oh let’s just say chocolate biscotti. 😛
I made the recipe has written, except I used my mini-muffin pan. I was going to add lime zest, but completely forgot. These were delicious and spicy. These muffins are loaded with diced red bell pepper, jalapeño, corn kernels, cilantro, chili powder. Everyone who tried them, loved them.
I was going to pair them with vegetarian chili, however, since the outside temperature has become warm I wasn’t craving chili. Today it’s in the 80’s in the Los Angeles area 🙂 I paired my muffins with a salad (to use up left over red bell pepper with homemade jalapeño-lime vinegarette.

I made minis, too, but was too wimpy to make spicy ones!
I thought about minis but was too lazy to spray my pans! My regular size muffin pans are silicone and I’m spoiled… Corn muffins are not crave-worthy, but yours are pretty and the lime zest would be delicious.
Yeah, chili when it’s 80 degrees outside is just wrong. The muffins look great!

It was warm here, now it is cold! Too cold. I like cornbread too, but definitely not chocolate biscotti. Your muffins came out very nice just the same. I am glad everyone liked them. My hubby liked them a lot too.

Yeah, what’s with the weather? We’re pushing 65 degrees here in Vegas. Helloo, winter? Oh well, we shouldn’t complain, right? I mean, everyone else is freezing their butts off.

We were in the single digits here in Northern Illinois. Eighty degrees sounds like a distant dream to me. I wish I had thought of the lime zest. That would have added an interesting layer to the whole experience!

Your muffins sure are pretty. I think that I would’ve liked them better with the peppers and the cilantro–I like spices and the different tastes in things like this.
