<p>I didn&#8217;t realize Thanksgiving was so close. I knew I would be out of the country and wouldn&#8217;t have to plan a dish, dessert, or two. I didn&#8217;t pay attention to where the holiday fell on the calendar. I was vaguely aware of that the holiday was coming up. It&#8217;s hard not to be aware of it with every magazine cover screaming Thanksgiving or all the wonderful blog posts about delicious sounding dishes.</p>
<p>It took me by surprise then when a coworker told me Thanksgiving was next week {I wrote this on November 18}. Really? Next week? Wow.</p>
<p>Anyway, I made these scones and brought them in my last day of work before I left for vacation as a Thanksgiving/Holiday treat. The recipe comes from Isa Chandra Moskowitz&#8217;s <a href="http://www.amazon.com/Vegan-Brunch-Homestyle-Asparagus/dp/0738212725/ref=sr_1_1?ie=UTF8&amp;s=books&amp;qid=1258583638&amp;sr=8-1" target="_blank"><em><strong>Vegan Brunch</strong></em></a> and is an incarnation of autumn flavors and scents. While they baked (and cooled!!) they made my kitchen smell so good. It almost made me a bit sad to be missing Thanksgiving. Almost. Until I remembered I would be sailing the South Pacific today. <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_razz.gif' alt=':P' class='wp-smiley' /> </p>
<h2>Happy Thanksgiving!</h2>
<h3>Cranberry and Spice Scones</h3>
<h5>Adapted from <em>Vegan Brunch</em></h5>
<ul>
<li>1 1/4 cups almond milk</li>
<li>2 teaspoons apple cider vinegar</li>
<li>2 cups all-purpose flour</li>
<li>1 cup white whole wheat flour</li>
<li>2 tablespoons baking powder</li>
<li>1/2 cup sugar</li>
<li>2 teaspoons cinnamon</li>
<li>1 teaspoon allspice</li>
<li>1/2 teaspoon ground nutmeg</li>
<li>1/4 teaspoon ground cloves</li>
<li>1/2 teaspoon salt</li>
<li>1 cup dried cranberries</li>
<li>2 tablespoons canola oil</li>
<li>1 teaspoon pure vanilla extract</li>
<li>Raw sugar for sprinkling</li>
</ul>
<ol>
<li>Preheat oven to 375° F and line a baking sheet with parchment paper.</li>
<li>In a small bowl, stir together almond milk and vinegar. Set aside to curdle.</li>
<li>In large bowl, whisk  flours, baking powder, spices, sugar, and salt together until well-combined. Stir in dried cranberries. Make a well in center.</li>
<li>Add oil and vanilla to almond milk mixture and pour into dry ingredients. Stir until just moistened and combined.</li>
<li>Use a 1/4 measuring cup or large ice cream scoop to place mounds on baking sheet. Sprinkle tops of scones with raw sugar. Place in oven and bake for 18 to 22 minutes until the scones are lightly browned and firm to touch. Remove from oven and place scones on rack to cool for at least 20 minutes.</li>
</ol>
<p><em>Makes 12 large scones</em>.</p>

<p>This is my third year in a row cruising  the <strong>South Pacific</strong>; first time to Fiji. On the itinerary this year: 3 different islands in Fiji, <a href="http://en.wikipedia.org/wiki/Tonga" target="_blank"><strong>Tonga</strong></a>, 2 different <a href="http://en.wikipedia.org/wiki/Cook_islands" target="_blank"><strong>Cook Islands</strong></a>, <a href="http://en.wikipedia.org/wiki/Bora_bora" target="_blank"><strong>Bora Bora</strong></a>, <strong><a href="http://en.wikipedia.org/wiki/Taha%27a" target="_blank">Taha&#8217;a</a></strong>, <a href="http://en.wikipedia.org/wiki/Moorea" target="_blank"><strong>Moorea</strong></a>, and then finish in <a href="http://en.wikipedia.org/wiki/Papeete" target="_blank"><strong>Papeete</strong></a>. I&#8217;m not a big fan of cruising, but I obviously like this ship. It&#8217;s small, 300 passengers, and geared towards activity (diving, hiking, snorkeling, waterskiing, windsurfing, kayaking).</p>

<p>It&#8217;s like summer camp because I get to meet up with with friends I met from the years before.</p>
<p>There&#8217;s <strong>Laksman</strong> from Sri Lanka. He&#8217;s a bartender on the ship. I met him the first year I was on board and last year we went ran together in the <a href="http://en.wikipedia.org/wiki/Marquesas" target="_blank"><strong>Marquesas</strong></a> and on <strong>Moorea</strong>.</p>

(Montreal) who was my scuba instructor, <strong>Robert</strong> (Montreal), who was my water ski instructor, <strong>Martin</strong> <strong>B</strong>. I wonder who I will meet this year.</p>

<p>I made chocolate ones to get the second basic macaron recipe (the first were the <a href="http://pinkstripes.wordpress.com/2009/10/27/db-macarons-i-got-the-feets/" target="_blank"><strong>vanilla ones</strong></a> I made for <a href="http://thedaringkitchen.com/" target="_blank"><strong>Daring Bakers</strong></a>) out of the before moving on to different flavors.</p>
<p>The recipe for the cookiecomes from <a href="http://www.pierreherme.com/index.cgi?&amp;cwsid=4508phAC194316ph0807309" target="_blank"><strong>Pierre Hermé</strong></a> via <a href="http://www.gourmandisedesserts.com/" target="_blank"><strong>Gourmandise Desserts</strong></a>, who taught the macaron class I took at <strong>Surfas</strong>. For the filling I used the last of the <a href="http://pinkstripes.wordpress.com/2009/10/25/sms-devils-food-cake-and-peatnut-butter-frosting/" target="_blank"><strong>Peanut Buttercream</strong></a> I had on hand.</p>

<h3>Chocolate Macarons</h3>
<h5>From Gourmandise Desserts</h5>
<ul>
<li>1 1/3 cups (140 grams) almond flour</li>
<li>2 cups powdered sugar (250 grams) powdered sugar</li>
<li>1/4 cup (25 grams) cocoa powder</li>
<li>4 egg whites, at room temperature</li>
</ul>
<ol>
<li>Place the almond flour, powdered sugar and cocoa powder in food processor and process for a few seconds until well combined.</li>
<li>Beat the egg whites until you almost reach stiff peak stage.</li>
<li>Fold in dry ingredients into the egg whites in three parts using a large spatula. Continue to fold until mixture forms a ribbon&#8211;batter falls uniformly off the tip of the spatula.</li>
<li>Pipe macarons onto parchment or silcone lined cookie sheets. Let the cookies dry for at least an hour {<em>I let mine dry for almost 3 hours</em>}.</li>
<li>Preheat oven to 425° F oven. Place cookies inside and immediately turn oven down to 350° F. Leave the door ajar and bake for 10 to 12 minutes.</li>
<li>Once you&#8217;ve removed the cookies from the oven, pour a few tablespoons of boiling water underneath the liner. Wait two minutes and peel off the paper.</li>

<p>Today, November 15, is <strong>National Bundt Day</strong>. The only reason I know it&#8217;s National Bundt Day is because one of my blogging friends, <strong>Mary</strong> from <a href="http://foodlibrarian.blogspot.com/" target="_blank"><strong>The Food Librarian</strong></a>. She chose to celebrate by baking and blogging a bundt a day for the 30 days leading up to today. She really, really, really likes bundts and named her blogathon&#8211;<a href="http://foodlibrarian.blogspot.com/2009/11/national-bundt-cake-day-november-15th-i.html" target="_blank"><strong>I Like Big Bundts</strong></a>.</p>
<p>Inspired by Mary, I baked a bundt to celebrate National Bundt Day: <strong>Deep Chocolate Sour Cream Pound Cake</strong>. The recipe came from Tish Boyle&#8217;s <em><strong>The Cake Book</strong></em>. You can find the recipe <a href="http://chubbyhubby.net/blog/?p=545" target="_self"><strong>HERE</strong></a>. As its name implies, it is full of chocolate flavor.</p>

<p>I&#8217;m a little late writing this post because yesterday I completed my longest hike ever. I hiked to the top of <strong>San Gorgonio</strong>, which at 11,501.5 feet is the highest peak in Sounthern California. Not satisfied with one peak, my hiking group and I  bagged two additional peaks: <strong>Big Horn</strong> (3rd highest, 10,997 feet) and <strong>Dragons Head Peak</strong> (4th highest, 10,866 feet). It was a tough and challenging hike, 19+ miles total. We started at 6:30 am and made it back to our cars in the dark at 5:30 pm.</p>

<p>If you haven&#8217;t already baked these cookies that have taken the food blog world by storm, you must drop everything and make them NOW. Seriously, they caused an existential crisis in me. They are that <strong>GOOD</strong>.</p>
<p>At first, you take a bite and think: &#8220;<em>it&#8217;s a chocolate chip cookie. it&#8217;s good</em>&#8221; and then the flavor hits. <strong>AMAZING</strong>. It&#8217;s like an <strong>EVIL TWIN</strong> of the standard chocolate chip cookie. A little darker, a little mysterious, and very irresistible. And I&#8217;ve always been drawn to the bad boys. The recipe uses <strong><a href="http://www.amazon.com/India-Tree-Muscovado-Sugar-Pound/dp/B001E5DZSO" target="_blank">special dark (molasses) brown sugar</a></strong>, no vanilla, and makes you sift your chopped chocolate (two kinds: I used 41% milk and 70%)  to make sure there is no chocolate dust in the cookie.</p>
<p>In celebration of the opening of <strong>Bouchon Beverly Hills </strong>this month, I made <strong>Thomas Keller&#8217;s Chocolate Chip Cookies </strong>from his new cookbook <a href="http://www.amazon.com/Ad-Hoc-Home-Thomas-Keller/dp/1579653774/ref=sr_1_1?ie=UTF8&amp;s=books&amp;qid=1258063175&amp;sr=8-1-catcorr" target="_blank"><em><strong>Ad Hoc</strong></em></a>.</p>
<p>If you don&#8217;t know by now, I am a big fan of <a href="http://www.bouchonbistro.com/" target="_blank"><strong>Bouchon</strong></a>. And that&#8217;s putting it mildly. I&#8217;ve been counting down the days for the local branch of <a href="http://www.bouchonbistro.com/" target="_blank"><strong>Bouchon</strong></a> to open&#8230;but because of my travel and the holidays I probably won&#8217;t make it to the restaurant until  after the New Year. <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_sad.gif' alt=':(' class='wp-smiley' /> </p>
<p>Of course, now that I&#8217;ve tried the cookies I really want to go to <a href="http://www.adhocrestaurant.com/index.php" target="_blank"><strong>Ad Hoc</strong></a> the restaurant.</p>

The recipe says to place 8 per sheet, I baked six per sheet and would suggest that number because they do spread.</p>
